The 119-key Royal Palms Resort and Spa in Phoenix, Arizona Appoints
Michael Petersen-Incorvaia as Director of Catering and Conference Services and
Christian Giles as General Manager of the Property’s Restaurant, T. Cook’s

PHOENIX, AZ (April 3, 2013) – Royal Palms Resort and Spa, Phoenix’s renowned luxury boutique hotel, is pleased to announce Michael Petersen-Incorvaia as the new Director of Catering and Conference Services of its dynamic team. Petersen-Incorvaia brings more than 26 years of hospitality experience to his position as Director of Catering and Conference Services for the premier destination resort and spa located at the base of Camelback Mountain.

Prior to joining Royal Palms, Petersen-Incorvaia spent 11 years as the Director of Catering for Renaissance Phoenix, where he oversaw local social, corporate and political events for the former Wyndham property and was awarded the Wyndham Phoenix Manager of the Year in 2007 and 2009. He has also held Senior Catering Manager, Associate Director of Convention Services and Director of Catering roles with the Westin, MeetingMakers.com and Hyatt.

Petersen-Incorvaia assists with continuing Royal Palms Resort and Spa as one of more than 30 independent, upscale hotels, resorts and conference centers managed by Destination Hotels & Resorts, which is consistently rated one the top 10 independent hospitality management companies in the United States. In this new role, Petersen-Incorvaia will be responsible for managing Catering Sales, Conference Services and Destination Services for the property, while also orchestrating and maintaining the exceptional service standards of Royal Palms.

Royal Palms Resort and Spa, Phoenix’s acclaimed luxury resort, is also pleased to announce Christian Giles as the new General Manager of the property’s renowned restaurant, T. Cook’s. Giles brings more than 16 years of experience to his new position at Royal Palms.

Prior to joining Royal Palms, Giles spent the last 16 years as General Manager of Charlie Trotter’s in Chicago, one of the country’s most well-known culinary landmarks. In his past position, Giles oversaw all facets of the day-to-day operations. Throughout his time at Charlie Trotter’s, the restaurant achieved multiple awards including the Mobile Five Star award for the last 15 years, continuous AAA Five Diamond recognitions and multiple accolades from Wine Spectator magazine. Giles and his mentor Charlie Trotter also wrote several books together on what it takes to deliver five-star restaurant service.

Giles’ hire will assist with upholding T. Cook’s highly acclaimed dining service both locally and nationally and continue the promotion of Royal Palms Resort and Spa as one of more than 30 independent, upscale hotels, resorts and conference centers managed by Destination Hotels & Resorts. In this role, Giles will be responsible for managing the food and beverage staff, costs and day-to-day operations for T. Cook’s, while orchestrating and maintaining the exceptional service standards of Royal Palms.
